There are two methods for continuously refining crude edible oils: chemical refining and physical refining.
1. Physical Refining:
The physical method removes the free fatty acid in the deodorization process, and the gum content in the crude oil is removed during the degumming process. In this method, comparatively more FFA is distilled out giving a high oil refining rate with minimum oil loss. (Note: oils like palm oil do not need to use alkali refining.)
2. Chemical Refining:
Chemical refining is the most common method used to refine all types of crude oils, especially those with high free fatty acid levels. It removes FFAs and other impurities through a chemical process called acid-base neutralization. An alkaline solution, commonly causitic soda, is added to neutralize the acids. This creates soapstock and gums, which are then separated using separators and centrifuges. The neutralized oil is then bleached and deodorized to finish the refining process.
